Venison Chili

Amount Measure Ingredient -- Preparation Method
1 pound ground venison (or finely chopped)
1 cup cooked red kidney beans
1 cup apple cider
1 cup cooked wild rice
1/4 cup chopped raw smoked bacon
1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped green bell pepper
2 tablespoons paprika
1 tablespoon ground cumin
1 teaspoon cider vinegar
1/2 teaspoon cayenne
1 each clove garlic -- minced
1 each bay leaf
Garnishments:
1 cup chopped cilantro
1. Heat a thick-bottomed sauce pot to medium-high heat.
2. Add the bacon and brown lightly.
3. Add the venison and cook for 10 minutes.
4. Add the chopped vegetables and spices.
5. Cook the vegetables until translucent.
6. Add the cider and cider vinegar.
7. Bring to a simmer and cover.
8. Reduce heat to low and cook for 30 minutes.
9. Serve hot.
