Jerusalem Artichoke Slaw

Amount Measure Ingredient -- Preparation Method
2 cups peeled and julienned Jerusalem Artochokes
1/4 cup plain nonfat yogurt
1/4 cup mayonnaise
1/4 cup finely diced sweet Gherkin pickles
2teaspoons lime juice
2teaspoons onion juice (optional)
1/2 teaspoon nutmeg
salt and white pepper -- to taste
1. Pour the lime juice immediately over the Jerusalem artichokes to keep
them from browning.
2. Mix in the remaining ingredients.
3. Serve cool.
