Three Wise Men Brioche

Makes one brioche ring

Amount  Measure       Ingredient -- Preparation Method

For the brioche:
2 teaspoons active dry yeast
3 1/4  cups all-purpose flour
1/2  teaspoon salt
3/4  cup granulated sugar
1 1/4  cups soft, unsalted butter
3 each whole eggs
7 each  egg yolks
Garnishments:
1 teaspoon orange zest
1 teaspoon lemon zest
1 teaspoon vanilla extract
1/4  cup candied orange peel
1/2  cup guava or quince paste
3/4  cup granulated sugar or sanding sugar
1 each whole (for egg wash)
1 each miniature ceramic baby

Directions:
1.  Dissolve the yeast in a little lukewarm water.
2.  Combine the flour, salt and 3/4 cup sugar.
3.  Cut the butter into flour mixture.
4.  Add the yeast, eggs and egg yolks.
5.  Combine gently to form a consistent, sticky dough.
6.  Place in a lightly greased bowl and transfer to a warm spot to leaven.
7.  Let rise until it has doubled in size (about 2-4 hours).  Be patient; the longer it takes to leaven, the better the flavor will be.
8.  Punch down the dough.
9.  Gently knead into a roll as thick as your forearm and place the ceramic baby in it such that it will bake in the middle of the roll.
10.  Join the two ends of the roll together as seamlessly as possible.
11.  Place on a non-stick (or greased) cookie sheet and cover with plastic, allowing it to double in size again.
12.  Remove the plastic and brush the top with egg wash.
13.  Garnish the top with strips of guava or quince paste and strips of candied orange peel.
14.  Bake in 350ºF oven for 25 to 35 minutes until the top is golden brown.
15.  Remove from the oven and allow it to completely cool before cutting (about 1 hour).

COMMENT:  THIS IS BORROWED FROM MEXICAN TRADITION AS A SNACK USUALLY SERVED AFTER DINNER WITH HOT COCOA.  THE PERSON THAT FINDS THE CERAMIC BABY IN HER PORTION GETS TO HOST NEXT YEAR'S BRIOCHE ON THE FEAST OF THE THREE WISE MEN (JAN 6TH).
