Honey Cottage Cheese and Fresh Berry Blintzes

Amount Measure Ingredient -- Preparation Method
1 cup nofat cottage cheese
1/4 cup honey
1 cup quartered strawberries
1 cup raspberries
1 cup blueberries
1 cup blackberries
12 sheets spring roll wrapper
1. Start with clean berries, cutting the strawberries into quarters and
leaving the other berries whole. Toss all the berries together in a bowl.
2. Combine the cottage cheese with the honey and set aside.
3. Fill each sheet with about 2 tablespoons of the cottage cheese mixture
and about 2 tablespoons of berries. Place the cheese and the berries diagonally
from corner to corner.
4. Fold the corners closest to the cheese in first, then the others.
Set aside.
5. Finish the remaining blintzes and lightly brown in a non-stick pan.
Spray oil or a bit of butter improve the flavor and texutre.
6. To serve, cut the blintz on a sharp bias and garnish with the remaining
berries and dust with powdered sugar.
