Molten Chocolate Souflée Cake

Amount  Measure       Ingredient -- Preparation Method

1/2  pound  salted butter
1/2  pound sweet baking chocolate
1/2  cup heavy cream
1/2  teaspoon vanilla extract
1/2  teaspoon coffee flavor extract
1/2  teaspoon orange extract
1/2  cup all-purpose flour
4 each eggs
4 each  egg yolks
1/2  cup sugar

THIS RECIPE WILL YIELD 8, 4-OUNCE RAMEKINS.

PREPARING MOLTEN CHOCOLATE CAKES:
1.  Combine the butter, chocolate, cream and flavors in a saucepan and melt together at low temperature.
2.  Remove from the heat and wisk in the flour.
3.  Combine the eggs, yolks, and sugar and whip to a thick consistency.
4.  Fold the egg mixture one third at a time into the chocolate.
5.  Rub the insides of the ramekins with butter and fill with the batter.
6.  Bake at 350ºF for 10-12 minutes until the cake has soufléed.

NOTES : You can use 8-ounce ramekins to yield four, larger portions.
COMMENT:  I SERVE IT WITH A SCOOP OF VANILLA BEAN ICE CREAM ON TOP.  AS THE ICE CREAM MELTS, IT BECOMES A SILKY, SWEET SAUCE.
